About this Coffee:

This coffee is produced by Campesinos Ecológicos de la Sierra Madre
de Chiapas (CESMACH), a fair-trade and organic certified coop located within
the buffer zone of El Triunfo Biosphere Reserve. Located in the highlands of
the Sierra Madre de Chiapas. El Triunfo Biosphere Reserve is one of the world’s
most diverse forest reserves. This reserve contains Mesoamerica’s largest
continuous cloud forest, and it serves as a refuge to thousands of plant and
animal species.

El Triunfo is a rare and valuable sanctuary requiring continued protection,
and CESMACH ensures this protection through various sustainable practices. All
coffee is shade grown, and biological corridors are created in order to facilitate
bird and animal migration. In addition our Importer, Cafe Imports pays a 10
cent premium for each pound of this coffee that is to be used for the continued
maintenance of El Triunfo Biosphere Reserve.

CleanCaf™ Coffee Maker and Espresso Machine Cleaner and Descaler

Hard water and lime scale can do serious damage to coffee makers and espresso machines in no time. Build up on the boiler prevents it from heating properly and lime deposits can clog up water lines. Left untreated these things can cause machine failure.

Urnex has developed an easy to use, non-toxic cleaner and scale remover. Simply dissolve the citric-acid based powder in warm water and add it to the coffee machine’s water reservoir. The solution gently works on the buildup until it dissolves. The water tank on your machine is then filled with fresh water and then flushed through the system.

Each packet of cleaner is sufficient for one cleaning. There are 3 packets to a box. Recommended for all types of coffee makers, espresso machines and appliances that heat water, including irons, steamers and teakettles.

Instructions for Use:

  1. Dissolve contents of Cleancaf™ package in 4 cups of warm water. Pour into water reservoir. Put empty pot and filter basket in place. For espresso machines attach handle and place an empty container below.
  2. Turn machine on and begin the brew cycle. Espresso machines, also allow several ounces of Cleancaf™ solution to flow through steam pipe (into a container to avoid spray.) Discard entire solution once it has passed through your machine.
  3. Rinse all components and repeat steps 1 and 2 twice with clean water only. Espresso machines remove handle. You may soak handle and filters in Cleancaf™ solution then rinse all components with clean water.

Tanzania Peaberry Coffee

I just got back from a trip to Cafe Imports and they have Tanzania Peaberry in stock!!!!!

I picked up a bag each of Tanzania Peaberry, Ethiopia Yergacheffe and Papua New Guinea Kunjun Estate.

 

We had a big green coffee bean order today for Tanzania Peaberry and we are currently out of it until Monday  or Tuesday afternoon.  If you have ordered some or are going to we will ask you if you would like to wait for the Tanzania Peaberry to be in stock to roast your order or if you would like a substitute.

Good News: We have a new Guatemala coffee!

Bad News:  We will not have Guatemala Antigua for the remainder of this year.

Here is a little info about the Acatenango coffee that I just picked up this week and I will have it listed on our stores later today.

The newly-recognized region of Acatenango, Guatemala consists of over 5,000 hectacres of mountains, hills, and volcanic slopes. The Acatenango volcano is Central America’s third highest volcano, and coffee may grow as high as 6,500 ft. Coffee was first planted in this region in the 1880s, and today there are over 4,000 growers.

Average rainfall is between 48 to 72 inches per year, and the temperature ranges between 14 and 31 degrees Celsius.

Harvest takes place between mid January and March.


Cupping notes:

Floral, hazelnut, sweet, coconut, creamy body, spice, raspberry nose, lively acidity.
