Cupping Notes: Fruit acidity, raspberry, orange. About this Coffee: Only red, ripe cherries are picked for this lot, and careful drying procedures are used. The extra care provided by producers at origin gives this coffee a bright acidity and sweet, clean fruit flavors. Coffee holds a special place in Ethiopian culture that transcends that of the coffees from other origin countries. The majority of the crop does not even leave the country and is drunk with great ceremony by the Ethiopian people. This is in contrast to other origins where coffee is a cash crop, with the best being exported, and the dregs kept locally and drunk unceremoniously with plenty of milk and sugar to choke it down. One taste of an excellent Ethiopian coffee and you will understand this passion for the bean.

With a Gene Café coffee bean roaster, producing a fresh, great-tasting cup of coffee at home has never been easier.
The ability to control the variables is key to producing the perfect roast, and the Gene Café has been engineered to give complete control over time and temperature– two important factors for achieving perfectly roasted beans. The Gene Café’s control panel is equipped with temperature and time controls capable of producing a full range of coffee styles, from a light American roast to a dark Italian roast that is ideal for espresso. The system’s large Pyrex® roasting chamber and clear safety cover allow users to check the progress of the entire half-pound batch– an advantage over many other roasters.
Gene Café’s Total Control system allows the user to make time and temperature adjustments on the fly without having to interrupt or re-start the roasting process. LED displays provide time and dynamic temperature information while audible tones alert the user to cycle changes. Newbies can follow the instruction manual’s simple time and temperature chart while experienced roasters will be pleased by how easy it is to fine-tune the process to personal tastes. Gene Café’s unique, patented off-axis roasting chamber and hot air convection system ensure even roasting regardless of the batch size. And because the flow-through convection system does not recirculate the hot air, Gene Café is exceptionally efficient at removing chaff, even from dry processed beans.

5 Cup Yama Stove Top Vacuum Coffee Brewer The Yama Vacuum Coffee Brewer is Back!
Also known as a Coffee Syphon or Coffee Siphon This is the 5 cup model, but the cups are only 4 or 5 ounce cups, not the American sized cup of 12 to 16 ounces! It should give you 2 honest cups of coffee, with our homes coffee cups we get 2 full with a little left over. If you’ve never had vacuum brewed coffee before, you’ll be in for a treat, both visually and in taste with our Yama Vacuum Coffee Pot. Vacuum brewed coffee was initially invented in the 1840s in France, and became very popular in the United States around the middle part of the 20th century. Companies like Silex, Sunbeam, Westinghouse, General Electric, Cory and others had entire lines of vacuum brewers for sale during this period. This brewing method undeniably produced the best tasting filter coffee, but it lost favor in the convenience obsessed America of the 1950 and beyond. While other parts of the world continued to use vacuum brewers (most notably Europe and Japan), in the U.S., percolation, auto drip and instant coffees gradually replaced vacuum brewing use, bringing super convenient (yet also super bad tasting) coffee to the American breakfast table. Today, quality coffee is making a major comeback in North America, and as a result, people are starting to use vacuum brewers again. Their technique of brewing your coffee at perfect brewing temperatures ensures a perfect cup. And the way it makes the coffee! Everyone who sees a vac pot in action is amazed at the process. You will be amazed as well. Our Yama Vacuum Brewers produce 5 cups or 8 cups, (depending on model) of quality coffee, and requires a slightly finer grind than normal auto drip, though it is very forgiving for almost any grind type. This model works on gas and electric range tops, and comes with a wire diffuser for use on electric coil burners. It takes about 4 minutes to heat the water, and another 2 minutes to brew. Once you remove from the heat source, the “kick down” takes about 30 seconds and is the best part of the show. Remove the top, placing it in its convertible lid/stand, and bring the pot to the table for serving. The Yama Vacuum Brewer ships with one filter cloth, the filter assembly, a measuring spoon, lid/stand, and the vacuum brewer, and comes with a 6 month warranty. Additional filters are available for an additional charge.

I couldn’t figure out why the Yamas were not selling, untill this morning I was looking for things to do on the site and I saw that I had in big bold print “Soon to be Back in Stock” at the top of the listings! I have that removed so now I hope they sell. I am going right now to take new pictures of them and I am going to create new listings for all the Yama Vacuum brewers we have in stock.
