Mocha Java Cake
We shot this video as she was baking it for her family reunion later that day.
Heat oven to 350 °. Grease and flour two 9-inch round pans or one 9×13 pan.
In large bowl, combine 2 c. sugar, 1 & 3/4 c. all-purpose flour, 3/4 c. cocoa, 1 & 1/2 tsp. baking powder, 1 & 1/2 tsp. baking soda and 1 tsp. salt.
Add 2 eggs, 1 c. milk, 1/2 c. vegetable oil and 2 tsp. vanilla extract. Beat on medium speed 2 minutes.
Add 1 cup hot espresso made with Mocha Java Blend, or one cup hot espresso or strong coffee of your choice. Batter will be thin.
Bake approximately 30-35 minutes. Allow to cool completely. Frost with Mocha Java Frosting.
Mocha Java Frosting
Mix 2 & 1/2 c. powdered sugar, 1/4 c. cocoa, 1/3 c. softened butter, 1 Tbs milk and 1 shot (2 Tbs.) espresso until well blended and smooth. You may adjust the amount of espresso and milk to your liking.
