Blind Assessment: Gentle, impressively balanced cup. Nut, milk chocolate hints in the aroma. Richly sweet-toned acidity, lightly syrupy body, softly lively flavor with continued hints of nut and chocolate and a black-cherryish fruit. Rich, long, resonant finish.
Notes: Mandheling is a term variously used to describe a growing region surrounding Lake Toba in North Sumatra Province and a traditional type of wet-hulled coffee associated with that region. About this Coffee:
A truly rich and full-bodied coffee, Sumatra Mandheling coffees also presents an intense, bright aroma. Its acidity is distinct yet mellow. This coffee finishes sweet with a lingering richness. Small landowners whose tiny plots are scattered over high terraced plateaus of clay produce most of the coffee in Sumatra. The coffee grows under full sun conditions without the addition of chemical fertilizers or pest control. The area farmers are responsible for the initial stages of the coffee bean processing. The farmers remove the skin of the coffee cherries with hand-operated backyard milling machines and ferment the pulp covered beans overnight. The beans are then hand washed in the morning and allowed to dry on clay or canvas in the farmers yards. Parchment removal and a second drying are done at a middleman’s warehouse. A
third drying and sorting is done at the port of Medan before shipping. The combination of soil, climate, and primitive processing methods (variation in bean size and color are normal) are responsible for, and contribute to, Sumatran coffees being named one of the truly unique coffees in the world.
Sumatra anchors the western-most reach of the Malay Archipelago. Positioned directly on the equator it is the fourth largest island in the world.
This coffee is produced by Campesinos Ecológicos de la Sierra Madre de Chiapas (CESMACH), a fair-trade and organiccertified coop located within the buffer zone of El Triunfo Biosphere Reserve. Located in the highlands of the Sierra Madrede Chiapas, El Triunfo Biosphere Reserve is one of the world’s most diverse forest reserves. This reserve containsMesoamerica’s largest continuous cloud forest, and it serves as a refuge to thousands of plant and animal species.
El Triunfo is a rare and valuable sanctuary requiring continued protection, and CESMACH ensures this protection throughvarious sustainable practices. All coffee is shade grown, and biological corridors are created in order to facilitate bird andanimal migration. Guatemalan coffees are some of the most amazing fragrant and aromatic coffees in the world. The natural shade and jungle of the Guatemalan highlands are the perfect environment for the bourbon botanical variety of arabica (a spontaneous variety of the original typical), which lends itself to a very nice and very natural full cup. Antigua is Guatemala’s oldest and most famous coffee growing region. The magnificent volcanoes of Agua, Acatenango, and Fuego enclose this valley. Fuego lives up to its name (fuego means fire in Spanish) by spewing forth volcanic ash continuing to add to the rich soil of the area. Antiguan cups are nice bodies, full-on bright coffees with spice. There is a reason this region is so loved and sought out by the coffee connoisseur.
